Use incoming fruit as the reference
The published PS family table gives fruit input in t/h. Keep that rate separate from recovered puree, expressed juice and packed product; rejection and recovery change the material balance.
Describe what enters the rotor
State fruit size, firmness and preparation. Resolve hard-stone removal before feeding a general crusher, and identify any foreign-material separation upstream.
Choose for the next operation
A pressing feed needs appropriate drainage and handling. A pulping feed needs to suit the selected recovery arrangement. The smallest possible particle is not automatically the right target.
Include the opening envelope
The crushing chamber must remain accessible after installation. Hopper loading, mash discharge, cleaning waste and drive isolation affect the usable layout.
